The datum is basically a reference from which measurements are made for
locating the points in a coordinate system. WGS-84 is probably the
most commonly used datum, lat/long and UTM are the most commonly used
coordinate systems.
If your mapping product is intended for use with a specific datum and
you use it with another, it is typical to see a consistent offset as you
describe.
I use Tom Tom Navigator 5, I dont recall there being a preference or
setting for changing datums on it. I dont think it would be needed
since they provide their own mapping and either use the same datum for
all of it or control the datum changes in software when maps using
different datums are used. As far as I know there are no third party
maps available Tom Tom units.
